Creamed Spinach (and other greens) - lightened up

Creamed Spinach (and other Power Greens)



The fall weather always makes me want to make warm, cozy dishes, but with those can sometimes come higher calories.  I like this recipe because it has all of the flavors you want, but with less fat.  Serve alongside a pork chop or simply seasoned protein.

Ingredients:
  • 2 tsp olive oil
  • 1/2 cup onions, diced 
  • 2 tbsp flour
  • 1 cup skim milk
  • 2 tbsp parmesan cheese, freshly grated
  • 1/2 tsp nutmeg
  • 1/4 tsp fresh pepper
  • salt to taste
  • 4 oz cream cheese, reduced fat
  • 16 oz bag fresh Spinach and Power Greens

Directions:
In a large sauté pan, heat oil and cook onion for about 5 minutes.

Add flour to onions and whisk. Cook for one more minute so flour ‘cooks’ out that raw taste.
 



Slowly whisk in milk, parmesan cheese, nutmeg, salt, and pepper.  Add cream cheese, continue to whisk until smooth. 





Add ½ greens and combine well with the sauce. Toss until greens have begun to wilt and reduced in size, then add additional greens until they have all been added. Cook 3-5 minutes until the greens are cooked through. 




Add salt and pepper to taste. Serve warm.
