Slow Cooker Savory Carrots (with brown butter)

If you're like me, you love finding cool ingredients and just going from there to find a recipe.  These carrots were unique and a great deal (from my favorite store, Aldi.)  So many carrot recipes are sweet, but I love that this one is savory, (and of course, easy.)  Once you've browned your butter, you can let it rest in the slow cooker until ready to serve.


  • Ingredients
  • 2 pounds carrots, baby or peeled and cut into small chunks
  • 1/2 stick salted butter
  • 1/2 teaspoon salt
  • 1/4 cup brown sugar
  • 2 sage leaves 
  • fresh herbs: thyme or sage, chopped (to garnish. Forgot to get a pic with that, which would help the color.) 
Directions: 

In a medium pan, add the butter. Turn the heat to medium or just above medium. Stir occasionally until the butter starts to foam and ultimately turns brown. (You'll see the butter bubble up, then slowly flatten back out again as it turns brown and smells nutty.)  Be careful not to let it burn.  

When almost cooked through, add 2 sage leaves (to fry.)

Mix in brown sugar, a pinch of salt, and carrots.  Add to the slow cooker. 

Cook on high for about 3 hours or until tender.

Sprinkle with fresh herbs. Serve warm.  (sorry for the missing pic with the herbs, but I liked the thyme on it best.)
