Monster Eyeball Casserole

Monster Eyeball Casserole 

This is a great Halloween dish that serves a large crowd! It's Spook-tacular!


Ingredients

1 pound penne pasta
Green food dye (optional)
Olive oil
1 large jar of marinara sauce
2 cups mozzarella cheese, grated
1/4 cup of ricotta cheese
6 cheese sticks, warmed and sliced
1 can sliced black olives
1 bag of meatballs (or make your own)

 

Directions:

Heat a large pot of water to a strong boil. Add a tablespoon of salt and 1 teaspoons green food dye (or more if you prefer.)

 Add the pasta and cook at a rolling boil, uncovered, until the pasta is al dente. 

Drain the pasta through a colander. Toss with a little olive oil.

Preheat the oven to 350°F.













In a 13x9 baking dish, layer the (green) pasta, sauce, and ricotta. 







Top with shredded cheese.   










Heat cheese stick bites and meatballs (separately) in the microwave.

Spread meatballs evenly.  Add softened mozzarella sticks to the top of the meatballs. 
I used some store bought pork meatballs, and my own Turkey Spinach Meatballs - seen here. 

Squish a sliced olive into the mozzarella stick slice. Continue until the casserole is complete.



Bake in the oven until the top is lightly browned and the cheese melted, about 20 minutes.
