Miso Wonton Soup

Miso Wonton Soup


I wasn't feeling well the other week, but I mustered up enough energy to make this super simple soup. It's an easier version of chicken noodle if you're cooking for yourself and not up for much.

Ingredients:
4 cups chicken broth
2 cups water
1 package frozen wontons
2 tbsp miso paste
2 cups fresh spinach
1 carrot, sliced very thin

Directions:
Heat broth and water to a boil.

Add wontons (following directions for soup on the packet.)  Add frozen wontons to soup for 1-2 minutes.

Add miso and vegetables.  (I actually had some pre-cooked carrots that I used, but you could add peas, bok choy, scallions, chives, or mushrooms.)





Make sure soup is warmed through. Serve hot.
