Smoked Salmon and Egg Salad Bites


I recently hosted a baby shower and made this appetizer. It was very easy to have everything gathered and to put together just before your guests arrive. It’s a very fancy, but easy dish (and a real hit!)

Ingredients:
12 eggs, hard boiled
½ cup mayonnaise
½ cup greek yogurt
4 ounces smoked salmon
4 teaspoons fresh dill, chopped, plus some for garnish
4 teaspoons capers, rinsed
1 tablespoon salt
1 teaspoon fresh ground pepper
½ loaf of French bread, sliced

Directions:
Preheat oven to 350 degrees. Bake bread until brown and crispy, about 10 minutes. (Brush with olive oil if possible.) 

Peel eggs and mash with a fork.

Mix in mayo, yogurt, capers, salt, and pepper to taste.

Lay out bread slides. Layer with salmon, then spread 1/8 cup egg salad onto each slice. 
 
Add a few extra capers and sprig of dill for garnish.
