Kohlrabi and Apple Salad

(with a Lemon-Dijon Dressing)


One of my favorite things about cooking is trying to use new ingredients.  I happened to order a Kohlrabi, and had done a lot of research about it, when I got a call from my mom. Dad added it to the garden, so she said she needed to figure out how to use it.  She made a slaw for the first time, and I chose to make this salad. 
Kohlrabi

Ingredients 

  • 3 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon Dijon mustard
  • 2 medium kohlrabi or 1 large, peeled, thinly sliced on a mandoline (quartered or sliced)
  • 1 head green lettuce, roughly chopped
  • 1 crisp red apple (ex: Royal Gala), thinly sliced on a mandoline
  • 2 tablespoons drained capers

Directions


Whisk oil, lemon juice, and mustard in a large bowl; season with salt and pepper. 









Add kohlrabi, lettuce, apple, to the vinaigrette and toss to coat.  Top with capers and serve.
