Zucchini and Turkey Sausage Boats
I have been wanting to make this recipe for a while now, and had all of the ingredients in the house the other evening. I tried to take a simple recipe and make it even easier. (Let's be honest here, I made this while I had broken toe, so you don't have to be on your feet too long!)
Make this any busy night of the week.
Ingredients:
- 1 cup marinara sauce
- 4 medium zucchini (or yellow squash)
- 1 package Turkey Sausage, cooked
- 1 cup shredded mozzarella
- 8 tsp freshly grated Parmesan cheese
Directions:
Preheat oven to 350 degrees.
Cut zucchini in half and hollow out seeds with a spoon. (I used some yellow squash too.)
Cook or heat sausage through.
Place 1/4 cup or so of sausage in the "boat" of each of the vegetables until full.
Top with marinara sauce.
Top with freshly grated parmesan and shredded mozzarella cheese.
