Cantaloupe Salsa

Cantaloupe Salsa


Summertime has arrived, so refreshing appetizers are requested by all. This appetizer was super easy and could be served poolside with chips or over a piece of baked fish or chicken.  You can use any melon when making this appetizer, but cantaloupe only has 60 calories per cup, and over 100% of your vitamin A and D for the day. Delight in it!

Ingredients:
2 cups cantaloupe, finely diced (you can use any melon though!) 
2 tablespoons lime juice
2 tablespoons cilantro, minced
2 teaspoons jalapeno pepper, minced
Pinch of Salt
(Optional: Chips or baked protein)

Directions:

Cut up all of the ingredients, mix, and serve.
