Zucchini Pizza Bites

Zucchini Pizza Bites
(Gluten-Free)



Judge away, but my friends and I get together almost every Monday to watch 'The Bachelorette' together.  If we are out with our friends all weekend, and then again getting together on Monday, it is time to  lighten up our snacks.  What goes best with watching shirtless men having a pool party (on The Bachelorette) than a healthy, but delicious appetizer!  This may take a little bit of time for each little step, but if you prep it before, it only spends less than 5 minutes in the oven.

Ingredients:
Zucchinis, sliced into ¼ quarter inch
½ cup pizza sauce (I prefer marinara since it’s less sweet than pizza sauce.)
Mozzarella Cheese, shredded
Mini pepperonis (You can use any toppings, but these are just so cute!)
Italian Seasoning

Directions:
Line baking sheet with tin foil. (It’s hard to keep the mozzarella just to stay on the zucchini, so the foil will be a saver later.)

 
Slice zucchini on the diagonal in order to have more surface area for sauce and toppings.


Place zucchini on baking sheet.  Add a small spoon of sauce on each zucchini piece to coat.



Top with cheese and mini pepperonis.
















Broil for 3-4 minutes.  (If you prefer to bake it will make them less “crisp”, but will cook the zucchini more.)
