Blue Cheese stuffed Dates wrapped in Prosciutto 



This recipe is a super easy, yet classy appetizer that can be served at any party. It can be put together in 10 minutes and quickly baked to have a refined pocket of salty sweetness.  Feel free to alter this to make it gorgonzola for those without a taste for blue cheese, wrap the date in bacon instead of prosciutto, or replace the date with a fig.  You can make this appetizer for 3 or 30. There are so many options to create a scrumptious appetizer.


Ingredients:


Medjool Dates
Crumbled Blue Cheese (or a block, crumpled)
Prosciutto (you need 1 slice of prosciutto per date)




Preheat oven to 350 degrees.

Cut date in half through the center and carefully remove pit through opening. (I teach elementary school and we call this “Hamburger style” of cutting, vs. hotdog. This means to cut it crosswise instead of lengthwise. )


Create a pocket in the date half by squishing the fruit to make a larger pocket.

Stuff with blue cheese and pinch the date closed.


Wrap ½ slice of prosciutto around the stuffed date. (Note: you can wrap the prosciutto into a neatly wrapped bundle or a purse/package. Whichever you are going for visually!)

Place wrapped dates on baking sheet and bake until prosciutto is crispy (about 12 minutes.)







Serve warm. 

(this batch was small: 6 dates, which was more than enough for 3 people.)
