Chicken,
Chorizo, and Quinoa Soup
I recently went to visit my mom and dad in Maryland for my break from school. Santa brought my mom quinoa because she had never tried it before. (My parents are very healthy eaters, but she will make bulgur or brown rice before trying something new.) This recipe was to combine her current love for chorizo and the quinoa she had yet to make. :-)
Ingredients:

1 tbsp olive oil
1 onion, diced
2 stalks celery, chopped
2 cups chopped carrots
5 oz chorizo, chopped
1 teaspoon Cajun seasoning
1 teaspoon Cajun seasoning
4 cloves garlic, minced
1 cup Quinoa, uncooked
1 pound kale, roughly chopped
1 pound kale, roughly chopped
6 cups chicken stock
1 pound cooked, diced chicken
1 can diced tomatoes
Salt and Pepper, to taste
Sour cream, for topping
Heat olive oil in a large pot over medium heat. Add the
onion, celery, carrots, chorizo, Cajun Seasoning, and cook, stirring, until
vegetables are tender (about 5-10 minutes.)
Stir in garlic, Quinoa, and kale and cook for a minute more. Add in stock and bring to a boil. Cover and simmer until Quinoa softens (about 12 minutes.)
