Fig, Bacon, and Goat Cheese Crostini
This
appetizer is simple to make, but elegant to present. It pairs well with a
crisp, white wine, so grab these ingredients and whip it up!
Ingredients:
½ loaf French bread, sliced and halved
2 tablespoons extra virgin olive oil
4 slices of center cut bacon
1 pint black mission figs, halved
4 ounces goat cheese, room temperature
Thyme sprigs, divided into 1/2 – 1 inch pieces
Directions:
Preheat oven to 400 degrees. Brush olive oil onto the baguette
pieces. Bake for 10 minutes, until
crispy.
Drain bacon grease, but using the same pan, place figs
in hot pan seed side down. Allow figs to
caramelize (about 3 minutes.)
While figs sear, spread goat cheese on crostini bread.
Place one fig half on each piece of bread into the goat
cheese. Stick 1 piece of bacon and 1
sprig of thyme into each fig.
Serve immediately.
(Note: if you have balsamic reduction, drizzle across
the platter.)
