Pomegranate Cheese Ball

Pomegranate Cheese Ball


This little jeweled ball is perfect for the Christmas dinner table, or any gathering with friends.  It's simple a far as skill, yes the display makes it look very fancy.  You can make it in a short amount of time, and ahead of time (since it has to chill), and then you show up to the party expecting the ooh's and aaah's.  
(Another great bonus is that you can make the ball any size you need! Just halve of double, depending on the size of the gathering.)

Ingredients
2 (8-ounce) blocks of cream cheese, softened
4 ounces cheddar cheese, shredded
2 green onions, greens only, chopped
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon ground pepper
1 cup pomegranate seeds (arils)

Serve with firm crackers for spreading on, such as nut thins or pita rounds.


Directions
Add to the food processor: softened cream cheese, cheddar cheese, green onions, garlic powder, salt and pepper. 




Form into a ball and roll in pomegranate seeds. Cover with more seeds as needed. (note: if making for Christmas, reserve some green onion/chives for the outside.) 


Refrigerate until firm, about 30 minutes.   Serve with crackers. 
(Tip: Allow to rest a room temperature for around an hour for easier spreading.)
