Greek Seafood Stew



I first tried this recipe at cooking club with just shrimp (no scallops or potatoes) and it was amazing! (original recipe at the bottom of the page.)  However, I made this recipe for an Oscars Party, to mimic the movie: Manchester by the Sea. So I changed it up slightly, which you can too.  Change up the seafood, change out the potatoes for orzo or nothing, and so many other creative ideas! 



Just be careful not to cry your tears of the movie into this dish! ;-) 

Ingredients:
  • 1 tablespoon oil
  • 1 pound scallops
  • 1 pound shrimp, peeled
  • 4 cloves of garlic, chopped
  • 2 cups diced potatoes
  • 2 large tomato, diced
  • 4 green onions, sliced
  • 1 cup dry white wine
  • 1 teaspoon oregano
  • 1/4 cup parsley, chopped
  • salt and pepper to taste
  • 4 oz. feta (coarsely crumbled)
  • 2 tablespoons parsley (chopped)
Directions:
Heat the oil in a pan.
Add the seasoned scallops to the pan. Allow to sear for about 2 minutes. Flip. Repeat. Set aside.

Add more oil and the shrimp and sauté them for a minute on each side and set aside.

Add the garlic and sauté until fragrant, about 1 minute.

Add the potatoes, tomatoes and green onions. 








Sauté until the tomato starts to break down, about 3-5 minutes. Add 1 cup chicken stock and bring to a boil. Reduce and simmer until just cooked through, 15 min.  






Add the scallops, shrimp, wine, herbs and season with salt and pepper and simmer for 2 minutes. 





Remove from heat and gently mix in the feta.


Cover and allow to rest for 3 minutes.


Garnish with parsley and serve with crusty bread.
