White Bean and Avocado Dip
Goodbye to our British friend! |
Charlotte, 17 days old, came to party! |
I recently made this dip for a summer party. I wanted to make sure that the appetizer was able to sit out without refrigerator, and still be enjoyable throughout the day. Not only did it work great there, but when I served it again the next day, it was a big hit. It's light, refreshing, and healthy.
Ingredients: (It's easy to 1/2 or I doubled this recipe.)
2 cans white beans, rinsed
1 ripe avocado
1 jalapeno, seeded
2 cloves garlic, roughly chopped
2-4 tbsp lime juice
2 tbsp fresh cilantro, plus extra to garnish
2 tbsp olive oil
1/2 tsp salt
Directions:
Add all ingredients besides olive oil into the food processor. Add oil as it streams through. (Add a little water if still too thick.)
Garnish with fresh cilantro.
Serve with sliced cucumbers, pita chips, etc.
