Turkey Spinach Meatballs

Turkey Spinach Meatballs


If you're like me, you like having a bag of meatballs in your freezer at all times.  It's such an easy protein to heat up quickly on a week night!  Why not go ahead and make them yourselves and just freeze from there?  That's what I did with these. (I enjoyed them best with some pesto!) 

Ingredients: 

  • 1 (10 oz.) frozen spinach, thawed, squeezed dry1 package ground turkey breast (1 1/3 pounds)1/2 medium onion, finely chopped3 cloves garlic, chopped1 large egg 1/4 cup milk1-2 slices bread, torn into small pieces1/4 cup grated Parmigiano Reggiano cheese 2 dashes Liquid Smoke (optional)1/2 teaspoon salt 1 teaspoon freshly cracked black pepper
Directions;
  • Pre-heat the oven to 400°F.

  • In a bowl, mix turkey, spinach, onion, garlic, egg, milk, bread pieces grated Parmigiano Reggiano, liquid smoke, salt and pepper. Mix well.







  • Form about 24 medium balls and arrange on foiled/non-stick baking sheet.   
  • Bake for 20 minutes, or until cooked through. 
  • Make ahead: Allow meatballs to cool completely, then freeze.
