With just a little
chopping, this recipe is super simple and can be prepared quickly. I actually
found some yellow tomatoes at Aldi for a great deal, so I used two different
types of tomatoes. I love the variety of color you see in this recipe!
Ingredients
⅓ cup olive oil
4-6
Roma tomatoes, seeded and diced (or tomato of your choice with not too many
seeds.)

cucumber, diced (If you use an English cucumber, you may want to use 2/3)
4
ounces feta cheese, crumbled
2
tablepsoons Cavender's Greek seasoning
Directions
In a large bowl, carefully mix oil, tomatoes, cucumbers, feta, and Greek seasoning. Adjust seasoning to your taste. If not serving right away, set in fridge.
Serve with pita chips, crackers, or toasted baguette slices.
