Watermelon Margarita

Watermelon Margarita

I first made this recipe at a cooking club called “Two to Tango”.  We paired up with a friend, and made recipes that paired up.  Some other pairs made Hawaiian chicken and flirtini, or shrimp salsa and mojito.  I made this and Megan made a Margarita Chicken Dip.  It was delicious and I knew it would be perfect for our Memorial Day Pool Party!!




Ingredients:
1 teaspoon lime zest 
½ cup water
½ cup sugar
Lime wedges
Margarita Salt
5 cups watermelon juice
¼ cup lime juice
2 cups tequila
½ cup orange-flavored liqueur (triple sec)
Ice

Directions:
Make lime simple syrup: In a small sauce pan, combine the lime zest, water, and sugar. Bring to a boil over medium while stirring until the sugar dissolves. Cool to room temperature or make in advance. (note: It tastes like fruit loops!)


Rim your glass with lime wedge and salt.

(Make watermelon juice by pureeing it in a blender or food processor. Strain.) 


In a large pitcher, combine ¼ cup lime syrup, watermelon juice, lime juice, tequila, triple sec and ice. Stir. Pour into glass. 

(note: if not serving right away, put the ice in the glass instead of the pitcher.)


Serve near pool (if possible!)
