Cucumber and Dill Tea Sandwiches

Cucumber and Dill Tea Sandwiches
This recipe is light, refreshing, and easy.  I originally made it for an Oscar party, but then made it a few weeks later for a baby shower.  It is also extremely cost effective, so go ahead and bet that these will be at the pool this summer! 

Ingredients:
8 ounces cream cheese, at room temperature
¼ cup mayonnaise
4 tablespoons chopped fresh dill
2 tablespoons lemon juice
Salt and Pepper
12 slices white bread
1 large English seedless cucumber, thinly sliced

Directions:
In a small bowl, combine the cream cheese, fresh dill, and lemon juice. Season with salt and pepper. Refrigerate or allow to sit for flavors to set. 








Spread cream cheese mixture onto a thin layer onto the bread. 





Lay cucumber slices in rows over ½ of the bread slices.


Top cucumbers with remaining bread.

Cut crusts off bread and cut into triangular quarters.

Serve immediately or refrigerate
