Creamy Acorn Squash Dip

Creamy Acorn Squash Dip



I love trying to take ingredients may use the same way and to try something different.  I had roasted some acorn squash and sweet dumpling squash earlier in the week, but come Saturday, needed an appetizer for a football game.  My alma mater, Clemson, was playing my boyfriend’s college team, so it all worked out well that this dip is orange! GO TIGERS (who did win!)

Ingredients:
1/2 acorn squash (or sweet dumpling), roasted 
4 ounces cream cheese
½ cup half and half
2 dashes liquid smoke
4 dashes cayenne pepper
2 tablespoons sriracha hot sauce
1 tablespoons pepitas (roasted pumpkin seeds, or roast the seeds from the squash)
















Directions: Blend all of the ingredients (besides pumpkin seeds) in food processor. Adjust smokiness and heat.






(note: If your dip is too thick, thin out with additional milk or half and half.)





Top with Pumpkin Seeds.
