Fig, Bacon, and Goat Cheese Crostini

Fig, Bacon, and Goat Cheese Crostini


This appetizer is simple to make, but elegant to present. It pairs well with a crisp, white wine, so grab these ingredients and whip it up!










Ingredients:
½ loaf French bread, sliced and halved
2 tablespoons extra virgin olive oil
4 slices of center cut bacon
1 pint black mission figs, halved
4 ounces goat cheese, room temperature
Thyme sprigs, divided into 1/2 – 1 inch pieces

Directions:
Preheat oven to 400 degrees.  Brush olive oil onto the baguette pieces.  Bake for 10 minutes, until crispy.




Cook bacon in skillet until crisp.  Move to paper towel on a plate to cool.  Cut into 1 inch pieces.


Drain bacon grease, but using the same pan, place figs in hot pan seed side down.  Allow figs to caramelize (about 3 minutes.)


While figs sear, spread goat cheese on crostini bread.



Place one fig half on each piece of bread into the goat cheese.  Stick 1 piece of bacon and 1 sprig of thyme into each fig.


Serve immediately.

(Note: if you have balsamic reduction, drizzle across the platter.)
