Whole Wheat Pesto Biscuits

Am I the only one who has kiddos in your life that LOVE Star wars?  My nephews wanted to make multiple items from The Star Wars Cookbook, and after having made the carrot top pesto, we used it to make Kit Fisto Biscuits.  (Honestly, I have no idea who Kit Fisto was, but my oldest nephew made sure to come read to me about him – an apparent Green-skin colored Jedi.  Don’t worry – I put a summary page about him at the end of this page.) 

This recipe was a great way to use leftover biscuits and the boys kept asking for more.  It’s not only flavorful, but using your own cookie cutters make it fun!

Ingredients:
1 cup whole wheat flour 
1 cup all-purpose flour, plus some for dusting the work surface
2 teaspoons baking powder
½ teaspoon baking soda
¼ teaspoon salt
1/3 cup butter (or vegetable shortening)
½ cup basil pesto
5 drops green food coloring (optional)
¾ cup buttermilk, at room temperature




Directions:
Preheat oven to 450 degrees F.



Pulse the 2 cups flour, baking powder, baking soda, and salt in the food processor once or twice to blend. 





Add the butter (or shortening), pesto, and food coloring and pulse until the mixture resembles coarse crumbs. 

































Add the buttermilk and pulse until the dough just holds together. 

Turn the dough onto a lightly floured surface. Knead gently 10-12 times.  Pat until the dough is ½ inch thick.

Cut out shapes with cookies cutters or a round glass.



Place the biscuits on a baking sheet lined with parchment paper. Bake until golden, about 8 to 10 minutes.
