Wheat Berry Salad
with Cherries, Mint, and Feta
I had encouraged my father to buy some new, whole grains, and he came home
with Wheat Berries. These have a tan
color and as sold in hard or soft processed. I didn’t know anything about this
before making this dish. So for those who don’t know, they are grains with at
least 15% protein. You’ll often find them for cereal, added to salad, or baked
into bread.

Ingredients:
1.5 cups hard wheat
berries
1 cup fresh cherries,
pitted and halved
1 scallions, chopped
½ cup parsley, chopped
Fresh Mint in the yard (and the bee)! |
¼ cup mint, chopped
2 tablespoons crumbled
feta
3 tablespoons extra
virgin olive oil
2 tablespoons lemon
juice
Salt and Pepper, to taste
Directions:
While ‘berries’ are
cooking, prepare cherries, scallions, parsley, and mint.
In a large bowl,
combine wheat berries, olive oil, lemon juice, and all previously chopped
ingredients. Season with salt and pepper
(if necessary – mine didn’t require any.)
