Curried Brussels Sprouts
The first time I tried this dish it was at Thanksgiving and I knew
I would have to make it again. I love
that it has different flavor profile than you would typically assume to serve
over this un-loved vegetable. To all the
Brussels sprout haters out there, try this!
¼ cup olive oil
½ cup
mayo
1/2 grapefruit, juiced
1 tbsp yellow mustard
1 tbsp sriracha
1 tbsp fish sauce
1 tsp curry powder
1 tsp sugar
¼ tsp salt
Cut brussels sprouts into halves or quarters.
Toss with oil.
Toss with oil.
Roast in a 400 degree oven for 20-30
until browned.
While vegetables are roasting, make
sauce by whisking the remaining ingredients.
Toss sauce with sprouts to coat. Serve warm.
