Spinach and Bacon Mini-Quiches (Make ahead too!)

Spinach and Bacon Mini-Quiches
These little appetizers are a fairly popular item that we pull out of the freezer and pop into the oven.  This homemade version is full of ingredients that you chose and know what you are serving to your guests.  Just reheat in the oven or microwave.

Makes 16 mini-quiches

Ingredients:
1 refrigerated pie crust
4 large eggs, beaten
1/2 cup milk (or half-and-half)
Salt and Pepper
1 cup finely chopped fresh baby spinach (packed)
4 pieces cooked bacon, crumbled

Directions:
Preheat oven to 375 degrees F.

Roll out pie crust. Using a biscuit cutter (or a cup), make into the shape of your mini-quiches. (I like to use the mini-muffin pan. Make sure it’s well greased or they will not come out easily.) 
















Beat eggs, cream, salt, and pepper.






Spread bacon then spinach at the bottom of pan on top of the crusts.

















Pour egg mixture on top.


Bake for 20-30 minutes until the egg is set. Allow to rest for 5 minutes, then remove and allow to sit on cooling rack until ready to serve.

Great to eat both immediately or reheated at a later time. (see below.)





--If making ahead of time, allow to cool on a wire rack. Freeze, separating with wax paper. Reheat in 350 degree oven for about 10 minutes.
