Sautéed Spicy Kale

Sautéed Spicy Kale


I love this fresh way to cook a Super Food that is so good for us.  It not only can be a great side dish to any other food you want, but it’s Paleo if served with meat.

One of the reasons I love preparing this way is that your kale gets tender, but the edges get brown and crispy.  It gives you different flavor dimensions with just a few simple ingredients.

Ingredients:
·         1 bunch curly kale, ribs and stems removed, leaves torn or chopped 
·         2 tablespoons olive oil (use more oil if necessary - you want your kale to have a light coating.)
·         1 teaspoon red pepper flakes
·         Kosher salt, freshly ground pepper


Directions:

Rinse and prepare the kale.

Heat olive oil and red pepper flakes. (this allows the spiciness and flavor to develop before adding the kale.) 




Add kale and salt and pepper to skillet.  Cook over medium-low heat, covered.






Sauté for 7-10 minutes, tossing occasionally, until the kale is tender and edges are crispy.
Serve warm.  (Served great with pork!)
