Fresh Figs wrapped in Prosciutto
with Blue Cheese
While I was walking
through Whole Foods the other night, they were packing up the fruits and
vegetables for the day. Out of the corner of my eye, already on the dolly to go
into the back, were these gorgeous, fresh figs. I snagged them and ran back through
the store to get blue cheese and prosciutto before the store closed. Great
idea!
There is something about
this dish; the sweetness of the fig, the creaminess of the blue cheese, and the
salty crunch of the prosciutto. It’s marvelous!

Fresh Figs
Blue Cheese
Prosciutto, thinly sliced
(number of slices need to match the number of figs), halved
Preheat oven to 400
degrees.
Quarter each fig, leaving
the bottom still attached.
Put about a square
centimeter of blue cheese in the center of each. Close fig.
Wrap each fig with a slice
of prosciutto.
Bake for 8-10 minutes,
until prosciutto is crispy.
Serve warm, halved or
whole. (Alex obviously ate them whole, and the ladies halved!)
