Mexican Mussels in Salsa
A crucial part of this recipe is to use a fresh, delectable salsa, since the flavor is based on this ingredient. I used Yah's Best that I received through Backyard Produce since it is a locally made product from Huntersville, NC. They offer a variety of flavors, but I used the Sweet Heat, which was medium. These mussels could easily go as spicy as your palate will allow.

Ingredients
- 2 lb fresh mussels
- 1 cup fresh salsa
- 1⁄4 cup water
- 1/2 stick butter
- 1/4 cup cilantro, chopped
Instructions
Rinse mussels in water and set aside.
Throw out any mussel that does not close after being rinsed. (You can also tap on the shell. If it does not close, then you'll need to throw it out.)
Leave to steam for 5-7 minutes, until mussels are open. (Throw out any mussels that do not open.)
In the meantime, heat 1/2 cup salsa, and 1/2 stick butter in a small saucepan. Pour over finished mussels.
Toss with Fresh Cilantro and serve with bread or tortilla chips.
Serve with tortilla chips or fresh bread.
