Broccomole

Broccomole
 

I was so excited when I first saw this concept, because I am always looking for new ways to add more vegetables into things I am eating.  This concept was based on an idea from one of Ludo’s Pop Ups, but it’s very different from what I made. This was super easy and a huge hit at any party!  
Ingredients 
Organic Broccoli Crowns from
Backyard Produce
(Pepper and Avocado also from there)

  • 2 cups chopped broccoli crowns (about 1-2 crowns)
  • 2 avocados
  • 1 Jalapeno Pepper, chopped, seeds removed (I used a poblano, but it needs more kick.)
  • 1/4 cup cilantro leaves
  • 2 cloves garlic
  • 1 lime, juiced
  • 1 tsp salt
Instructions

Cook the broccoli in lightly salted water until very soft. You want to make sure it will not be too chunky or hard in the dip.


Drain broccoli and allow to cool in the refrigerator. 





Once broccoli is cooled, put the following ingredients in the food processor:pepper, cilantro, garlic, lime juice, and salt. 


 Pulse until smooth. Add broccoli and pulse again. 




Add avocado chunks and process until smooth.   


Add more Lime or Salt to taste. 

Serve with chips or vegetables.  

Optional: Add chopped, seeded tomatoes at this point if you want.
