Apple, Gorgonzola, & Arugula Pizza
The first time I
made this pizza, I was a little concerned about putting fresh greens on top of
a pizza. It seemed peculiar like warmed lettuce (and I certainly don’t like
that.) As my friends and I ate through
this salty, crunch, sweet, fresh pizza I realized it added a new dimension to
pizza than just ingredients under the cheese.
It’s easy to make and can be done while working on other things.

· Pizza Dough (whole wheat can be found at Trader Joe's or sometimes in pillbury)
· 2-3 sliced Gala apples (the
thicker, the more crunch your pizza will have)
· 4 ounces crumbled Gorgonzola
cheese
· 1 tablespoon olive oil
· 2 teaspoons Dijon Mustard
· 1 teaspoon Lemon Juice
· 1 1/2 teaspoons Honey
· 2 cups Baby Arugula
Preparation
Roll pizza dough on pizza
stone. (Follow directions on pizza crust, but I recommend pre-baking for
about 10-15 minutes, depending on .)
Arrange apple slices evenly over
pizza crust. Bake for 5-10 minutes until lightly brown.
Bake for 5 minutes or until
cheese melts and begins to brown.
While pizza is cooking: Whisk
dijon, lemon juice, and honey. Add in olive oil slowly.
Toss Arugula with this dressing.
This is a great way to have salad travel. Keep dressing on the bottom until ready to mix and serve. |
When pizza is cooked, let cool
for 2 minutes, then top with arugula salad.
This is the same recipe with regular arugula, not baby. |
Slice and serve!
1. Roll out dough and place it in the oven.
2. Get in the Shower.
3. Top Pizza with Apples and put it back into
the oven.
4. Do Make up.
5. Add Cheeses.
6. Blow dry hair.
7. Pull Pizza out.
8. Get Dressed.
9. Top with Arugula and Slice.
10. Eat Pizza while looking cute. J
