My Paleo Week

My Week of Eating the Paleo Diet

I recently decided to give myself a 7-day Paleo challenge. Not for a particular reason, but just more to look at a different way to healthy eating.  I, honestly, thought it was going to be really difficult, but I really enjoyed it.  Also, when I inputted all of the calories on My Fitness Pal, I had a significantly fewer amount of calories through the week.  I would suggest everyone to try it and maybe you’ll find something you love and can integrate that into your diet.

Here are a few of the delicious items I ate:

Mushroom, Spinach, and Bacon Egg Cups
see blog post: Boys and Beets
Turkey Roll ups -
Spread guacamole on the inside of a turkey slice. Put a large handful of baby spinach in the middle and roll up. Serve with grape tomatoes. (257 calories)

Chicken Sausage (all natural), Yellow Squash, and Edamame
Sauce sliced yellow squash and sliced sausage with olive oil and Italian seasoning. Cook for about 10 minutes. Add cooked edamame with a few minutes. Heat until warm. (339 calories)

All Natural Chicken Sausage and Roasted Broccolini
(or Broccolette)
See Blog Post to cook this vegetable Boys and Beets - Broccolini

Turkey Tacos (with a side of squash)
(First, I have to admit I was very skeptical about these since I love mexican food and soft tacos, but they were SO delicious.)
1) Cook 1 lb extra lean ground Turkey with chili powder (1 tbsp), cumin (1 tsp), cayenne, and salsa (or hot sauce.) Add seasonings and a little water when the meat is cooked.
2) Take green leaf lettuce, and add 2 oz. of ground turkey, 1 tbsp of guacamole, and 1 plop of salsa.
3) Roll sides over and then fold end up.
(they're messy, but it's worth it!)
