Smoky Blue Cheese Dip

Cooking Club this month had the theme of CHEESE!

Can you have a much more delicious theme for the ladies to get together?  Our appetizers included soft and hard cheese, along with this Smoky Blue Cheese Dip and Megan's Feta Cheese Ball. (Hopefully she'll post it below, because it was great too!)

Start with the following ingredients in a bowl:
1 clove chopped garlic
2 tbsp balsamic vinegar
2 tsp dried thyme (I would recommend fresh though.)

Add in:
4 oz of crumbled blue cheese (smoked if available)
3/4 cup light sour cream,
3/4 cup Greek Yogurt (this was in place of mayonaisse/light mayo, so make this as healthy or indulgent as you want!)


If you found smoked blue cheese, congrats!  However, I wanted the smoky taste.  Solution = Liquid Smoke. (add about 10-15 dashes, depending on your taste.)

 Finally, season the dip with salt and pepper and set in refrigerator to set. 

Busy schedule? Do it ahead of time! I can be made up to two days ahead - just over and chill.
Serve with assorted vegetables or your favorite crackers.
